How did you start your journey?

Nordic inspired baking, passionate artisan approach

Where is your cuisine inspired from?

I started my baking career in 1987 whilst working and studying as a baker in Silkeborg. I won a bronze medal, at hes journeymans test, in 1991. I am also Head of Baking at the world famous Claus Meyers bakerys based in Copenhagen, training full-time advanced bakery students, creating the next generation of artisan bakers. As a good communicator I have worked with many other craftsmen and professionals throughout the world such as Claus Meyer, Founder of restaurant NOMA and Hugh fearnley-whittingstall known from River cottage. My project work has taken me to America, France, Germany, Bahamas, Norway, Thailand, Greenland, United Kingdom and Mexico giving me an invaluable understanding of the origins and regionality in baking.
